A Coffee with Rich Aromas

On the volcanic mountains of El Salvador called Cordillera Del Balsamo grows an exceptional coffee. Sheltered from the Pacific wind, the coffee plants are protected by a small shrub called Colpachi. It allows the plants to grow and the fruit to be harvested when fully ripe. Goppion's El Savador coffee grows between 1250 and 1450 m and is harvested between the end of December and February by hand to preserve its quality. 
This well-balanced coffee with its sweet notes of caramel and vanilla is balanced by a slight acidity. It has a pleasantly long sweetness in the mouth. This extraction will reveal its aromas with an espresso, whether it be on an automatic or a manual machine
All Goppion coffees are roasted by hand in Italy in a modern roasting plant belonging to the family business Goppion Caffe. The coffees are roasted using the traditional slow roasting method (as opposed to the industrial method). 
The coffee beans are roasted separately (depending on the variety) in order to guarantee the highest quality. An "optical bi-chromatic" selection is carried out, allowing each bean to be analysed. Those that are fermented or under-ripe are ejected so as not to contaminate the blend.
