This rare and precise method involves fermenting the coffee cherries in an oxygen-free environment, followed by the application of a controlled thermal shock. The result: perfectly mastered fermentation that enhances the natural aromas and delivers a cup with remarkable aromatic clarity.

Since the invention of the thermal shock technique, which locks aromas inside the coffee beans, special care has been taken at every stage of the process. This includes the development of a condensation drying system to preserve these aromas, as well as an exclusive process using yeasts to perfectly control fermentation, ensuring consistent and carefully managed quality.
