Dreaming of a coffee that takes you on a journey, far from your daily routine? Les Cafés Lugat present their new creation: Castillo Vanilla Fudge, a specialty coffee with a dark roast and 100% arabica, offering intense and indulgent aromas. This coffee is carefully crafted from the Caturra and Castillo varieties, combining smoothness with aromatic richness.

Make yourself comfortable and step into South America, in the Quindio region of Calarcà, renowned for its volcanic soil and cool climate, ideal for cherry maturation. More specifically, the cherries come from the Finca La Milàn, run by Julio Cesar Madrid, which stretches over 200 hectares at an altitude of 1400 m.

His approach combines tradition, commitment and innovation, making him a recognised name in specialty coffee in Colombia and beyond. A third-generation producer, he modernises tradition while respecting the environment, favouring manual picking to select only perfectly ripe cherries, and introducing new fermentation methods.

A unique tasting experience thanks to a mastered co-fermentation process

Julio Cesar Madrid manages three family farms, grouped under the name Café Uba, with the ambition of passing on his expertise to future generations while experimenting with new fermentation protocols.

The co-fermentation method is used to shape the aromatic profile of the coffee and create cups with original and complex aromas. By adding fruit, spices or yeasts during fermentation, the producer stimulates biochemical reactions between the beans and these inputs. The aim of this technique is not to flavour the coffee, but to reveal and intensify certain notes, offering a unique sensory experience and enabling the creation of new aromatic profiles.

The process takes place in several stages: the beans are first oxidised in the open air, then placed in a closed tank for precise control. Mixed with macerated pineapple, raw cane sugar, natural vanilla and selected yeasts, they spend 48 hours in this environment, transforming sugars and revealing a gourmet aromatic profile with complex aromas.

Castillo Vanilla Fudge: a must-try coffee with a gourmet and fruity profile

This Lugat coffee, roasted in France by our experts and always fresher than 30 days, reveals its full potential with your bean-to-cup espresso machine. During an optimal extraction (extraction time - 27 seconds, output - 41g, input - 18.5g), the coffee releases all its indulgence and vanilla notes, with a medium body, hints of strawberry and a soft, lingering finish.

In general, in the cup, Castillo Vanilla Fudge unveils pastry and floral notes on the nose, followed by a soft, sweet mouthfeel, carried by aromas of candied fruit and peach. Its medium body reveals touches of nougat and vanilla, with a delicate milk chocolate finish. A gourmet cup your taste buds will delight in.
