Hello Pascale, Ruby chocolate and its drink variant Van Houten Ruby are both made from Ruby cocoa beans, which are native to West Africa and Latin America. Ruby chocolate, like many other food ingredients, is sensitive to oxygen, moisture, and sunlight. It is also sensitive to heat. In hot chocolate applications, ruby chocolate would lose its color. To preserve the beautiful ruby color when used to make hot chocolate drinks, a touch of beetroot concentrate and orange carrot have been added to the recipe. These plant extracts only stabilize the color without altering its characteristic taste or its superior quality. Hoping to have answered your questions, I wish you a good day. Oceane.
