About the Farm in Guatemala
The rugged landscape of Huehuetenango provides the setting for this Guatemalan coffee. Around Todos Santos and Tuiboch, small farms are scattered across the slopes of the Sierra de los Cuchumatanes, at elevations ranging from 1,400 to 1,850 metres. Here, local growers cultivate the Caturra and Bourbon varieties used to produce this coffee.
Coffee growing in Todos Santos is also a community story. ASODIETT was established in 1995, when ten local producers decided to combine their knowledge and resources. Today, their role extends beyond growing and harvesting, with the first stages of processing taking place close to the coffee farms.
After processing, the beans remain protected by their parchment layer while drying on small patios and the rooftops of local houses. This step demands close attention, particularly as rainfall can continue during the harvest period in this mountainous area. Once the drying process is complete, the coffee is sent to Antigua for final preparation.
