Known for its authenticity as much as for the quality of its products, the brand offers bean-to-bottle coffees that appeal far beyond the small Basque paradise. This small, family-run company has been working to perpetuate the tradition of speciality coffee for 40 years. The "Ximun brigade", as they like to call it, offers modern products in line with current concerns. You can find Specialty Coffee, chocolate and rooibos at Cafés Ximun.
Cafés Ximun is a family-run, artisanal roasting house based in Bayonne, which perpetuates the tradition of speciality coffee. The luxurious selection of the most beautiful coffee terroirs, the know-how of the chosen producers and the passion make Cafés Ximun the essential brand for speciality and/or certified organic coffees.

The type of roast will affect the balance of flavours (bitterness, acidity, sweetness, etc.) and reveal the aromas of the terroir to a greater or lesser extent.
The more the coffee is roasted the more its colour will change (from light to dark). The darker the roast, the more the aromatic notes are lost in favour of the roasting notes.
All our coffees have been placed in a colorimeter by our experts in order to compare the roast intensity.
The aromatic groups describe the tasting notes of your cup (hazelnut, chocolate, peach, white flowers, etc.).
If you don't know what your coffee profile is yet, we advise you to start with the most appreciated aromatic groups: rich & sweet or woody.
