Anaerobic washing process using thermal shock by Diego Bermudez
Discover the excellence of speciality coffee with Flor de Oro – 250 g – Coffee Beans – 1895 Coffee Designers by Lavazza. This exceptional 100% Arabica coffee comes from one of Colombia’s most prestigious farms: Finca El Paraíso, nestled between 1,800 and 2,000 metres above sea level in the Cauca region. Led by the visionary Diego Bermudez, this estate is internationally renowned for its artisanal expertise and innovative fermentation processes, behind some of the most pioneering coffees.
Among these unique creations, Flor de Oro stands out thanks to its anaerobic washing with thermal shock. This rare and precise method involves fermenting the coffee cherries in an oxygen-free environment, followed by the application of a controlled thermal shock. The result: perfectly mastered fermentation that enhances the natural aromas and delivers a cup with remarkable aromatic clarity.
Since the invention of the thermal shock technique, which locks aromas inside the coffee beans, special care has been taken at every stage of the process. This includes the development of a condensation drying system to preserve these aromas, as well as an exclusive process using yeasts to perfectly control fermentation, ensuring consistent and carefully managed quality.
