This exceptional coffee takes you straight to the heart of the Huehuetenango region, to the farm of Francisco Morales, where several varieties such as Bourbon and Caturra are cultivated and featured here. Grown at an altitude of 1,750 metres in a unique microclimate, the coffee plants of this third-generation coffee farmer produce outstanding microlots.
The cool temperatures of the Huehuetenango mountains, combined with the warmth of the Mexican border, encourage the development of dense beans rich in complex sugars. Dry summers ensure even drying, while Francisco further favours a 50% shade-drying method to preserve the integrity of the beans and their aromatic qualities. Thanks to a meticulous 40-hour fermentation, these coffee beans express a truly distinctive and remarkable character.
