This Colombian coffee is a 100% Arabica from organic farming and certified fair trade (SPP label). This complex coffee has a great aromatic richness and a beautiful intensity in the mouth with subtle citrus notes. Packaging: 1Kg.
Traditional Coffee : These are the most widespread coffees in the various distribution channels in France, both private and professional.
Superior Coffee : These are coffees that contain no more than 20% Robusta, whose country of origin we know and/or which have a label (organic farming, fair trade, etc.)
The FONDO PÁEZ brings together 543 families of small producers from the Páez Indian communities in the Cauca region. Kafue Nyaf'Tewesh, the coffee of the elders, is grown under forest cover: an agricultural system that is in danger of disappearing in Colombia. Far from the monoculture of coffee, the families cultivate a wide variety of food products on plots of 0.5 to 3 hectares. In this way, the Fondo revalues the identity of the Páez people and their respect for Mother Earth.
The cooperative benefits from exceptional growing conditions with areas at high altitude (between 1400 and 1900 m) where the coffee matures slowly and develops fine aromas. It is also one of the last production areas of Tipica coffee in Colombia. This tall coffee tree requires extra work when harvesting the coffee cherries: the branches have to be bent with one hand and harvested with the other.
This variety is the opposite of the hybrid coffee varieties created by the FNC, whose height is kept low by regular pruning. Thanks to its geographical position and its Arabica variety, Fondo Paez has set up a gourmet organic coffee business with the support of a team of young producers trained in the demanding exercise of cupping. Since the attack of Rust, the members of Fondo Paez are trying to recover a high percentage of Tipica variety in their harvest. These 350 Paez families also maintain a cover of shade trees, including legumes, which ensure moderate activity of the coffee tree and maintenance of soil fertility in the long term.
