A Water Decaffeination Method with No Solvents
Water Decaf uses a water-based decaffeination process that involves no chemical solvents. This technique, known as the Mountain Water Process, is carried out in Mexico by the company Descamex.
The beans go through several stages: steam baths, water washing, activated carbon filtration and finally drying. This process removes caffeine while preserving the coffee’s aromatic compounds.

The type of roast will affect the balance of flavours (bitterness, acidity, sweetness, etc.) and reveal the aromas of the terroir to a greater or lesser extent.
The more the coffee is roasted the more its colour will change (from light to dark). The darker the roast, the more the aromatic notes are lost in favour of the roasting notes.
