Illy coffee is made from 100% Arabica coffees, selected and roasted with care. Contained in metal tins, it is protected by pressurisation. This method of preservation allows the product to be kept for much longer than average, but also to let it "bloom" and to release its aromas and fragrances.

Illy's Decaffeination Method
 
Illy uses a solvent (dichloromethane) to decaffeinate its products before roasting. This highly volatile product is quickly eliminated and the fact that it is used before roasting means that there is no trace of this solvent in Illy's decaffeinated coffees.
 
With a very low caffeine content (1.5%), Illy decaffeinated coffees contain the lowest caffeine content on the market (0.05%). For your information, the legal standard for decaffeinated coffee is 0.1%.
