The Traditional Panettone Recipe by Galup
Storage instructions: store in a cool, dry place at a maximum temperature of 18-20°C. Keep away from sunlight and heat sources.
Ingredients: wheat flour – Sultanas 15% – Butter (milk) – Sugar – Candied orange peel 7% (Orange peel – Glucose-fructose syrup – Sucrose – Concentrated lemon juice) – Class A egg yolk from free-range hens – Natural yeast (wheat flour – Water) – Candied lime zest 4% (Lime zest – Glucose-fructose syrup – Sucrose – Concentrated lemon juice), Emulsifiers: fatty acid mono- and diglycerides – whole milk powder – invert sugar syrup – salt – honey – glucose-fructose syrup – barley malt extract – natural flavouring – natural Bourbon vanilla flavouring.
Icing ingredients (12%): Sugar – Class A egg white from free-range hens – ‘Nocciola Piemonte IGP’ (Piedmont hazelnut) 9% – Rice flour – Rice starch – Icing sugar (sugar – wheat starch) – Sunflower oil – Natural flavourings.
