Why is this Coffee a Grand Cru ?

  • A variety that is not yet widespread, Java, is an evolution of the Abysinia (an Ethiopian endemic variety) traditionally grown in Indonesia that gives a fruity acidity to the cup.
    The cherries are grown under shade for a slower ripening, giving greater complexity and more sugar to the final cup.
    Committed and passionate producers who participate each year in the Cup of Excellence in a perpetual quest for the exceptional cup.

About the Farm: 

Cafetalera Buenos Aires is a 215-hectare family business, founded over 55 years ago by Luis Emilio Valladarez. The farm produces Caturra, Maracaturra and Villa Sarchi coffees, in honey, natural and washed processes. Located in the municipality of Buenos Aires, in the Dipilto mountains, the company is in a speciality coffee production area, close to the border with Honduras. The farm has a microclimate, which favours the production of these speciality coffees.

The coffees are planted on sandy soil, at an altitude of between 1200 and 1700 meters, and the coffee trees are produced under shade (70% with a variety of species), with environmentally friendly soil and plant fertilisation. The producers carry out integral disease control and constant monitoring of the production stages. Their main objective is to carry out in-depth work in terms of quality, in order to develop a relationship of trust with their customers.

About the Producer:

Luis Emilio Valladarez has been in the coffee industry for 60 years and started his business by buying a small farm called Buenos Aires followed by two other farms, La Laguna and El Suyatal. All his production was sold as cherries. A few years ago, he decided to build his own processing plant - Cafetalera Buenos Aires - with the aim of controlling the production and export of his coffees.

Today, he works with his son Olman on two plantations: Buenos Aires Estate and La Laguna. A family collaboration that began in 2004, when Olman started to accompany his father and brother in the management and administration of the family's farms. Since 2005, the goal of these passionate producers has been to expand into the world of specialty coffee. They have participated several times in the Nicaraguan Cup of Excellence. In 2014, they reached the second place of the podium for their El Naranjo Dipilto (Maracaturra) microlot!
