After the international success of the Nose of Wine, Éditions Jean Lenoir had to sculpt a new "Nose" to cross the threshold of the third millennium.

Coffee had been waiting for more than four centuries to be encrypted in order to acquire its legitimacy like wine. Jean Lenoir embarked on a long and patient research project that allowed him to build, day after day, the foundations of a scientific study of coffee tasting.
