A Strong Coffee with Rich Aromas

On the banks of the Paucartumbo river grows an exceptional coffee. The Cafetalera Ecologica Alto Palomar cooperative groups together small producers like the one in Alto Palomar, which has 100 employees.  All the conditions are met to allow the plants to develop and the fruit to be harvested at full maturity. The Perùde Goppion coffee grows between 1200 and 1800 m and is harvested between April and July by hand to preserve its quality
This well-balanced coffee with its sweet notes of liquorice and honey is balanced by a slight acidity. It has a pleasantly long sweetness in the mouth. This extraction will reveal its aromas with an espresso, whether it be on an automatic or a manual machine
All Goppion coffees are roasted by hand in Italy in a modern roasting plant belonging to the family business Goppion Caffe. The coffees are roasted using the traditional slow roasting method (as opposed to the industrial method). 
The coffee beans are roasted separately (depending on the variety) in order to guarantee the highest quality. An "optical bi-chromatic" selection is carried out, allowing each bean to be analysed. Those that are fermented or under-ripe are ejected so as not to contaminate the blend.
