The roasting process of Pellini coffee is carried out extremely slowly and at very carefully controlled temperatures, depending on the type of bean being processed. This artisanal care is perfectly in line with the company’s Quality Project, which aims to achieve outstanding results while fully respecting the raw material, without resorting to any forced techniques.
Each bean is roasted evenly from the central core to the outer layer through a gradual heating process. The roasting method uses hot air only, so the beans never come into contact with metal. A stream of air keeps the coffee gently suspended as it roasts.
Cooling is also done with air. Afterwards, the beans are left to rest in special silos for decanting. During a meticulous tasting, twenty qualified judges compare the flavours and aromas of the coffee. By using all the senses, they can detect even the slightest variations in taste – from aroma to visual appearance. Only once the judges have given their approval is the coffee ready to be released.
