Overview of the farm and producers of Todos Santos
In Todos Santos, in the Huehuetenango region, coffee is grown on mountain slopes. Between 1,400 and 1,850 meters in altitude, the plots of several small farms are spread across the terrain of the Sierra de los Cuchumatanes, notably around Todos Santos and Tuiboch. It is in this environment that producers cultivate the Caturra and Bourbon varieties that make up this coffee.
Here, production is primarily based on a collective endeavor.
In 1995, ten producers from Todos Santos founded ASODIETT and pooled their expertise. Their involvement continues well beyond the harvest: the initial processing stages are carried out near the farms, then the coffee, still in parchment, is dried on small patios or on the roofs of houses.
In a region where rains can coincide with the harvest season, this phase requires careful monitoring. Once dried, the coffee heads to Antigua, where its final preparation takes place.
