More About the Fondo Páez Cooperative

The FONDO PÁEZ brings together 543 families of small producers from the Páez native communities of the Cauca region. Kafue Nyaf'Tewesh, the elders' coffee, is grown under a forest cover: an agricultural system that is endangered in Colombia. Far from the monoculture of coffee, the families cultivate a wide variety of food products on plots of land ranging from 0.5 to 3 hectares. In this way, the Fondo revalues the identity of the Páez people and their respect for Mother Earth.

The cooperative benefits from exceptional growing conditions with areas at high altitude (between 1400 and 1900 meters) where coffee matures slowly and develops fine aromas. It is also one of the last production areas of Tipica coffee in Colombia. This tall coffee tree requires extra work when harvesting coffee cherries: the branches have to be bent with one hand and harvested with the other.

This variety is the opposite of hybrid coffee varieties created by the FNC, whose height is kept low by regular pruning. Thanks to its geographical position and its Arabica variety, Fondo Paez has set up a gourmet organic coffee business with the support of a team of young producers trained in the complex exercise of tasting or "cupping". Since the attack of rust fungus, the members of Fondo Paez are trying to recover a high percentage of Tipica variety in their harvest. These 350 Paez families also maintain a cover of shade trees, including legumes, which ensure moderate activity for the coffee grower and maintenance of soil fertility in the long term.

Café Michel was founded in Southwest France (Pessac). It was the first French coffee-roaster to develop organic fair trade coffees in specialist stores. Café Michel is also active in the chocolate, tea and organic fair trade sugar sectors. In 2016, Café Michel's café Congo-Colombie was awarded 1st prize for the Best Espresso Mix in France by the Comité Français du Café (French Coffee Committee).
