The Story of Cafés Lugat:


Lionel Galut is the driving force behind Cafés Lugat and MaxiCoffee’s Master Roaster. Over the years, he has brought together a talented team of roasting specialists, united by a passion for sourcing and roasting outstanding coffees.

As a recognised coffee expert, judge at the French Coffee Championships and contributor at MaxiCoffee, Lionel invites you to discover the story of Cafés Lugat and the passion that inspires every roast.

Presentation of the Sidamo Region:

The Sidamo region lies in southern Ethiopia, close to the Kenyan border. It takes its name from the Sidama people, an ethnic group native to south-central Ethiopia. With its rich soils, high altitudes and favourable climate, the region offers ideal conditions for growing exceptional coffee.

Coffee plants are traditionally grown under the shade of forest trees, allowing the cherries to mature slowly and develop complex flavours. The coffee is carefully hand-picked, sorted and then washed, a processing method that helps create a bright, clean cup with lively acidity.

Sidamo coffee accounts for around 11% of Ethiopia’s coffee production and is particularly prized when processed using the washed method.

A Bit of Background...

Ethiopia, the birthplace of coffee, exclusively grows Arabica coffee at altitudes ranging from 1,500 to 2,300 metres above sea level.

The higher the coffee is grown on the country's plateaus, the more distinctive its flavour profile and aromatic intensity.

Ethiopian coffees are traditionally known as Moka coffees, named after the historic port of Mocha in Yemen, from which they were once exported. There are many different varieties of Moka coffee.

With around 400,000 hectares dedicated to coffee cultivation, coffee plays a key role in the Ethiopian economy and is one of the country's main export products.

Ethiopia is one of the world's leading coffee producers and exporters, with around 60% of its annual production exported each year.

Coffee is grown under natural forest shade (15%), in semi-forest areas (35%), alongside other crops (35%) and on more intensive farms (15%).

Around 80% of Ethiopian coffee is naturally processed, while the remaining 20% is washed.

Very few Ethiopian coffee farmers use chemical products on their crops. Although much of the country's coffee could qualify as organic, certification remains uncommon due to the associated costs.
