Sourced from the highlands of Huehuetenango in Guatemala, this 100% single-origin Arabica is produced by a collective of growers from Todos Santos. The Caturra and Bourbon varieties thrive at elevations between 1,400 and 1,850 metres, before being carefully roasted to a medium+ profile. The result is a rounded, well-balanced cup combining fruity notes with a deliciously rich character.
A Legacy of 125 Years Crafting Exceptional Coffee by the Falla Family
Coffee production in Todos Santos is very much a hands-on process for local farming families. Their involvement continues after the harvest, as they manage the initial processing of the coffee close to the farms rather than simply supplying freshly picked cherries.
Drying is another important step carried out locally. With the beans still enclosed in their parchment, the coffee is laid out across small patios and even the rooftops of family homes. In the mountainous climate of Huehuetenango, careful monitoring is essential, particularly when rain overlaps with the harvesting period.
Once drying is complete, the coffee is transported to Antigua for final preparation. This shared approach to coffee production has deep roots in the community: in 1995, ten growers from Todos Santos joined forces to establish ASODIETT, bringing their experience and resources together.
