Assam tea: the first productive region, the plantations are large and extend from the Brahmaputra river, to the foothills of the Northern Himalayas, from the Patkoi mountains to the Southern Naga. Assam teas are particularly spicy and full-bodied.
Darjeeling tea: this is the most prestigious of Indian teas and is often referred to as the "Champagne of Tea". Harvesting takes place from mid-March to the end of April and the "first flush" teas are lively and delicate with white fruit notes. The next two offer lower quality teas with ripe fruit notes.
Nilgiri tea in South India offers round, sweet teas with a hint of astringency. Travancore teas offer a fuller-bodied, more colourful liquor reminiscent of Ceylon teas.
Chai tea is India's best known tea recipe and is widely consumed in India and has spread to other countries.
