All you need is:

100ml Lavazza Espresso Italiano coffee, 250g mascarpone, 200g cream cheese, 100g icing sugar, 15g gelatine, 250g dried biscuits, 40g sugar, 150g butter, 5g coffee powder, 200g acacia honey, 100ml water.

Preparation :                                                

1- Crumble the biscuits and mix with the caster sugar and coffee.

2- Melt the butter and mix with the biscuit mixture until smooth.

3- In a bowl, mix the cream cheese, mascarpone and icing sugar.

4- Soften the gelatine in cold water and then melt it in the hot coffee extracted from your coffee machine, for example.

5- Add the coffee to the cream to make the mixture as uniform and homogeneous as possible.

Laying the cake :

1- Place in a 1/2 cm thick layer and leave to cool for 30 min.

2- Pour the coffee cream in a thicker layer over the first layer and leave to cool for the same amount of time.

3- Finish with a 1/2 cm thick layer of gelatine and chill for 6 hours.
