Process : Washed

In the mountains of Papua New Guinea is the Sigri plantation, which produces one of the best gourmet coffees in the world.

Coffee trees grow at about 1,500 meters above sea level and benefit from a cool climate and abundant rain. They grow under shade trees that protect them from wind, sun and heavy rain. These trees are also shelters for birds.

All coffee plants are exclusively of the Typica variety. The Sigri plantation pays particular attention to quality control. The fruits of the coffee trees are picked by hand and are rigorously checked.

The cherries must be very red, proof that the fruits are full of sugar and acidity. The selected cherries are then pulped on the day of harvest. The parchment coffees undergo total immersion in water for several days, which gives a higher quality. They are then naturally dried under the sun.

Small producers maintain their plots (than 2 hectares each) with between 20 and 600 coffee trees. 80 plantations (Estates) have been recorded. The most famous are the Sigri, Bunum Wo, Arona Valley, Gumanch and Tremearne plantations.

Today, Australian organizations (NASAA, BioFarm Australia) support producers so they can get the organic certification.

The coffee industry is controlled by the Coffee Industry Board. The government has always supported the production of Arabica. It guarantees a minimum selling price to producers at the start of each season .
