Cafés Lugat 'Kathangariri' is a Specialty Coffee from Kenya, a micro-lot from the Embu area, grown at 1800m altitude. This 100% Arabica (heirloom) delivers great notes of honey, white chocolate, blackberry & raspberry. Balanced coffee. Very light roast. Kenyan washed coffee: a special process that involves a double fermentation.
After pulping, the coffee cherries dry in tanks for 8 to 12 days. They are then washed and fermented dry a second time in tanks for 5 hours. After this double fermentation, the cherries are washed again and immersed in water overnight to remove the mucilage completely.
The next morning, the beans are spread in thin layers on drying tables (no more than 2/3 cherries thick) for about 4 hours so that the humidity rate of the cherry drops to 55%. They are then placed on African beds for 2 weeks to reach 10 to 12% moisture content.
