Cafés Lugat 'Evilio Anaerobic' is a Specialty coffee from Evelio Fernandez' farm in South-West Costa Rica. A blend of Arabica (Catuai & Caturra). The beans were processed using the anaerobic method. It gives this coffee exceptional notes of vanilla, cinnamon & caramel. Balanced coffee. Very light roast. Ideal for drip filter coffee methods. 250g pack of coffee beans.
The Anaerobic process
Anaerobic is a fairly recent and innovative process that comes from Latin American countries. The coffee cherries are pulped while keeping the maximum of mucilage around the beans and then immersed in tanks with more mucilage coming from other coffees intended for different processes (generally for washing).
These tanks are closed to prevent oxygen from coming in.
Then follows a period of anaerobic fermentation (without oxygen).
This fermentation will trigger 3 effects:
- a modification of the sugars that will gradually turn into alcohol
- an increase and modification of acids
- a creation of pressure via the released CO2
The pressure exerted inside the tank will favour the absorption of sugar and acid from the mucilage by the coffee beans, giving them a great sweetness and mildness. After a fermentation period of 18 to 24 hours and before the transformation of sugar into alcohol, the tank is opened gently (because it is under pressure due to fermentation).
The beans are then sun-dried for a minimum of 4 hours to stop and avoid further fermentation in the open air (aerobic fermentation) like the Honey process.
